- 1 teaspoon white peppercorns (freshly ground)
- 2 1/2 heads garlic (peeled)
- 200 grams pork (cut into pieces)
- 1/2 teaspoon salt
- 1 tablespoon oil (neutral oil like canola or vegetable)
- 1/2 tablespoon oyster sauce
- 1/2 tablespoon soy sauce
- 1/2 teaspoon sweet soy sauce
- 3 cilantro leaves (for garnish)
- Cucumber slices (for serving)
Instructions
- Prepare the Pepper and Garlic: Start by adding the white peppercorns to a mortar and pound them with a pestle until fine.
- Add peeled garlic to the mortar and roughly pound it along with the ground pepper until you have a nice paste.
- Season the Pork: Place your cut pork pieces in a bowl and season with salt. Add the garlic and pepper mixture and massage everything together.
- Heat a pan over medium heat and add your oil. Once shimmering, fry the marinated pork until browned evenly.
- Add the oyster sauce, soy sauce, and sweet soy sauce. Continue frying until the pork is cooked through and caramelized.
- Plate the pork with cucumber slices and cilantro on top.
Notes
Marinate the pork overnight for enhanced flavor. Keep an eye on the heat to ensure garlic doesn’t burn.
