Description

A comfort dish featuring tender chicken marinated in a garlicky sauce, stir-fried to perfection with vibrant flavors of garlic and pepper.


Ingredients

  • 500 g chicken breast or thigh, cut into 1-cm thick slices
  • 8 cloves garlic, chopped
  • 1 Tbsp oyster sauce
  • 1 Tbsp soy sauce
  • 1 tsp Golden Mountain sauce
  • 1 tsp fish sauce
  • 1 tsp black soy sauce (as needed for color)
  • 1 ½ tsp sugar
  • ¼ tsp ground white pepper
  • ¼ tsp ground black pepper
  • 78 cilantro stems, chopped
  • Water (as needed)
  • Vegetable oil for frying

Instructions

  1. Marinate the Chicken: In a medium bowl, mix the chicken with oyster sauce, soy sauce, Golden Mountain Sauce, fish sauce, white pepper, and black pepper. Allow it to sit while you prepare the garlic.
  2. Fry the Garlic: In a small pot or wok, add chopped garlic and enough vegetable oil to cover it. Fry over low heat until the garlic turns golden brown and fragrant (about 5 minutes). Drain the garlic on a paper towel and reserve the oil.
  3. Cook the Chicken: In a wok or a large pan, heat 2 tablespoons of the reserved garlic oil over high heat. Add the marinated chicken and sugar, stirring constantly. Cook until the chicken is golden and fully cooked (about 6-8 minutes). If the chicken sticks, add a splash of water to loosen it.
  4. Finalize the Dish: Just before removing from heat, stir in half of the fried garlic and chopped cilantro stems. Mix well to combine.
  5. Serve: Transfer the chicken to a serving dish, sprinkle with the remaining fried garlic, and garnish with the rest of the cilantro. Serve hot with fluffy jasmine rice or alongside your favorite stir-fried veggies.

Notes

Leftovers can be stored in an airtight container in the fridge for up to three days. Marinate chicken for a few hours or overnight for enhanced flavor.
