A comfort dish featuring tender chicken marinated in a garlicky sauce, stir-fried to perfection with vibrant flavors of garlic and pepper.

- 500 g chicken breast or thigh, cut into 1-cm thick slices
- 8 cloves garlic, chopped
- 1 Tbsp oyster sauce
- 1 Tbsp soy sauce
- 1 tsp Golden Mountain sauce
- 1 tsp fish sauce
- 1 tsp black soy sauce (as needed for color)
- 1 ½ tsp sugar
- ¼ tsp ground white pepper
- ¼ tsp ground black pepper
- 7–8 cilantro stems, chopped
- Water (as needed)
- Vegetable oil for frying
Instructions
- Marinate the Chicken: In a medium bowl, mix the chicken with oyster sauce, soy sauce, Golden Mountain Sauce, fish sauce, white pepper, and black pepper. Allow it to sit while you prepare the garlic.
- Fry the Garlic: In a small pot or wok, add chopped garlic and enough vegetable oil to cover it. Fry over low heat until the garlic turns golden brown and fragrant (about 5 minutes). Drain the garlic on a paper towel and reserve the oil.
- Cook the Chicken: In a wok or a large pan, heat 2 tablespoons of the reserved garlic oil over high heat. Add the marinated chicken and sugar, stirring constantly. Cook until the chicken is golden and fully cooked (about 6-8 minutes). If the chicken sticks, add a splash of water to loosen it.
- Finalize the Dish: Just before removing from heat, stir in half of the fried garlic and chopped cilantro stems. Mix well to combine.
- Serve: Transfer the chicken to a serving dish, sprinkle with the remaining fried garlic, and garnish with the rest of the cilantro. Serve hot with fluffy jasmine rice or alongside your favorite stir-fried veggies.
Notes
Leftovers can be stored in an airtight container in the fridge for up to three days. Marinate chicken for a few hours or overnight for enhanced flavor.
