Description

A refreshing and tangy Thai Cucumber Relish that enhances any meal with bold flavors and vibrant colors.


Ingredients

Scale
  • 1 1/2 cups water
  • 3/4 cup granulated sugar
  • 6 tablespoons vinegar
  • 6 shallots, peeled and diced
  • 1/2 cucumber, cut into sticks
  • 3 peppers (1 red, 1 green, 1 yellow)

Instructions

  1. Heat 1 1/2 cups of water in a saucepan over medium heat until steaming.
  2. Add 3/4 cup of granulated sugar and stir until fully dissolved.
  3. Incorporate 6 tablespoons of vinegar into the mixture.
  4. Cool the mixture completely off heat.
  5. Slice the shallots, cucumber, and peppers.
  6. Combine all the sliced vegetables in a large mixing bowl.
  7. Pour the cooled mixture over the veggies.
  8. Mix gently to coat all vegetables well.

Notes

For best flavor, ensure ingredients are at room temperature before preparation. Store in an airtight container in the fridge for up to one week.
