Description
A refreshing Thai drink made from dried chrysanthemum flowers and optionally flavored with gardenia fruit.
Ingredients

- 1 dried gardenia fruit (optional)
- 5 cups water
- 1/3 cup dried chrysanthemum flowers
- 1 cup sugar (adjust to taste)
- 1/4 teaspoon salt
Instructions
- Prepare the gardenia fruit (if using) by cutting it open to release its oils.
- Set up your pot by pouring 5 cups of water into a large pot over medium-high heat.
- Add the dried gardenia fruit, dried chrysanthemum flowers, and sugar once the water is boiling. Stir until sugar dissolves (about 2-3 minutes).
- Cool the mixture by removing the pot from heat and letting it infuse for about 15 minutes.
- Strain carefully into a pitcher to remove the flowers and solids.
- Enjoy by pouring over ice and savoring the tea.
Notes
Look for vibrant, colorful dried chrysanthemum flowers for the best flavor. This tea can be served hot or cold.
