Description

Indulge in the delightful warmth of Thai Banana Roti, a crispy flatbread filled with sweet bananas and drizzled with sweetened condensed milk.


Ingredients

  • 1 ½ tsp salt
  • 1 Tbsp sweetened condensed milk (or 1 tablespoon sugar)
  • 1 large egg
  • 260 ml water (room temperature)
  • 500 g all-purpose flour
  • 55 g unsalted butter, softened
  • 1 ½ Tbsp (22 g) unsalted butter (for coating the dough)
  • 1 Tbsp (15 ml) neutral flavored oil (for coating the dough)
  • Neutral flavored oil, for cooking
  • Extra unsalted butter for cooking (optional, but highly recommended)
  • Bananas (ripe and sweet)
  • Sweetened condensed milk (for drizzling)
  • Nutella or chocolate sauce (for extra indulgence)
  • Granulated sugar (to sprinkle)

Instructions

  1. Mix the Wet Ingredients: In a large mixing bowl, combine the salt with the water and whisk until the salt is dissolved. Then, stir in the sweetened condensed milk and the egg, whisking until everything is combined.
  2. Prepare the Dry Ingredients: In another bowl, combine the flour and softened butter. Use your fingers to rub the butter into the flour until you no longer see large chunks.
  3. Combine and Knead: Gradually mix the flour mixture into the water mixture and knead lightly until just combined. Cover with a kitchen towel and let rest for 15-30 minutes.
  4. Knead Again: After resting, knead the dough for about 5 minutes until it’s less sticky and moist. Allow the dough to rest for another 10-15 minutes.
  5. Form the Dough Balls: Divide the dough into small balls, coat them with a mixture of melted butter and oil, and let them rest for at least 3 hours at room temperature.
  6. Cook the Dough: Once ready to cook, heat neutral oil in a skillet over medium-high heat. Stretch each dough ball into a thin sheet, add banana slices, fold over, and cook.
  7. Crisp It Up: Cook for about 3-4 minutes on each side or until golden and crispy. Serve hot with drizzles of condensed milk and a sprinkle of sugar.

Store leftovers in an airtight container at room temperature for 1-2 days. For longer storage, refrigerate or freeze.
