- 3–4 boneless, skinless chicken breasts
- 1 cup shredded Jack cheese
- 2 tablespoons olive oil
- 2–3 cloves garlic, minced
- 1 cup low-sodium chicken broth
- ½ cup sour cream
- Salt and pepper to taste
- Chopped green onions and paprika for topping
Instructions
- Preheat the oven to 375°F (190°C).
- Pat the chicken breasts dry, rub with olive oil, and season with salt and pepper.
- Sear chicken in a skillet over medium-high heat for about 5 minutes on each side until golden brown.
- Add minced garlic and cook for 30 seconds.
- Deglaze the pan with chicken broth, scraping browned bits from the bottom.
- Stir in sour cream and allow to simmer gently for about 5 minutes.
- Top each chicken breast with shredded Jack cheese and transfer to the oven.
- Bake for around 15 minutes until cheese is melted and bubbly.
- Garnish with chopped green onions and paprika before serving.
Notes
For juiciness, brine chicken in a saltwater solution for 30 minutes before cooking. Use Greek yogurt as a sour cream substitute if desired.
