- 1 pound ground beef
- 2 medium sweet potatoes, diced
- 1 can black beans, drained and rinsed
- 1 onion, chopped
- 1 bell pepper, chopped
- 2 cloves garlic, minced
- 1 teaspoon chili powder
- 1 teaspoon cumin
- 1 teaspoon smoked paprika
- Salt and pepper to taste
- Olive oil for cooking
- Fresh cilantro for garnish (optional)
Instructions
- Heat 2 tablespoons of olive oil in a large skillet over medium heat until shimmering.
- Add diced sweet potatoes and cook for about 10 minutes, stirring occasionally until they soften and caramelize.
- Push sweet potatoes to the side; add ground beef, onion, bell pepper, and garlic. Cook for 6-8 minutes until beef is browned and vegetables are tender.
- Stir in chili powder, cumin, smoked paprika, salt, and pepper for 1-2 minutes.
- Add black beans and cook for an additional 2-3 minutes until heated through.
- Garnish with fresh cilantro if desired and serve warm.
Notes
