A comforting casserole that combines the delicious flavors of sushi in an easy-to-make bake, featuring tender salmon and a rich teriyaki sauce.

- 2 cups sushi rice
- 2 1/2 cups water
- 1 lb salmon, cooked and flaked
- 1/2 cup teriyaki sauce
- 1/4 cup mayonnaise
- 1 teaspoon sriracha (optional)
- 1/2 cup green onions, chopped
- 1 sheet nori, cut into strips
- Sesame seeds for garnish
Instructions
- Preheat your oven to 375°F (190°C).
- Rinse the sushi rice under cold water until the water runs clear, then combine with water in a pot. Bring to a boil, reduce heat, cover and simmer for 15-20 minutes.
- In a mixing bowl, combine flaked salmon, teriyaki sauce, mayonnaise, sriracha (if using), and green onions until mixed.
- Spread cooled sushi rice evenly in a greased baking dish and layer the salmon mixture on top.
- Bake for 15-20 minutes until heated through and the edges are golden.
- Sprinkle sesame seeds and garnish with nori strips before serving.
Notes
This dish can be made ahead by prepping the sushi rice and salmon filling in advance. Reheat in the oven when ready to serve.
