- 1 lb boneless, skinless chicken thighs
- 1/4 cup soy sauce (low sodium)
- 2 tbsp honey
- 1 tbsp rice vinegar
- 1 tbsp brown sugar
- 2 cloves garlic, minced
- 1 tsp ginger, grated
- 1 tsp cornstarch (mixed with 1 tbsp water)
- For the Slaw:
- 2 cups shredded cabbage (green or purple)
- 1 carrot, julienned
- 2 green onions, sliced
- 1 tbsp rice vinegar
- 1 tsp sesame oil
- 1 tsp honey
- Salt & pepper to taste
- For Serving:
- 8 small flour or corn tortillas
- Fresh cilantro, chopped
- Sesame seeds (optional)
- Lime wedges
Instructions
- Marinate the Chicken: In a bowl, mix soy sauce, honey, rice vinegar, brown sugar, garlic, and ginger. Reserve half for glaze. Add chicken to the remaining marinade and let sit for 15-30 minutes.
- Cook the Chicken: Heat a grill or skillet over medium-high heat. Cook chicken for 5-6 minutes per side until fully cooked (165°F internal temp). Brush with reserved glaze in the last 2 minutes.
- Thicken the Sauce: Pour remaining marinade into a small saucepan, add cornstarch slurry, and simmer until thickened (2-3 minutes). Slice chicken and toss in sauce.
- Make the Slaw: Toss cabbage, carrot, and green onions with rice vinegar, sesame oil, honey, salt, and pepper.
- Assemble Tacos: Warm tortillas, then layer with chicken, slaw, cilantro, and sesame seeds. Serve with lime wedges.
Notes
- For extra heat, add sriracha or red pepper flakes to the teriyaki sauce.
- Substitute chicken breasts if preferred (adjust cooking time).
- Slaw can be made ahead—it gets better as it sits!
