A fusion of Japanese and Mexican flavors, these Teriyaki Chicken Tacos feature juicy grilled chicken glazed in homemade teriyaki sauce, topped with a crunchy Asian-inspired slaw for a delicious and easy weeknight meal.

Ingredients

Scale
  • For the Teriyaki Chicken:
  • 1 lb boneless, skinless chicken thighs
  • 1/4 cup soy sauce (low sodium)
  • 2 tbsp honey
  • 1 tbsp rice vinegar
  • 1 tbsp brown sugar
  • 2 cloves garlic, minced
  • 1 tsp ginger, grated
  • 1 tsp cornstarch (mixed with 1 tbsp water)
  • For the Slaw:
  • 2 cups shredded cabbage (green or purple)
  • 1 carrot, julienned
  • 2 green onions, sliced
  • 1 tbsp rice vinegar
  • 1 tsp sesame oil
  • 1 tsp honey
  • Salt & pepper to taste
  • For Serving:
  • 8 small flour or corn tortillas
  • Fresh cilantro, chopped
  • Sesame seeds (optional)
  • Lime wedges

Instructions

  1. Marinate the Chicken: In a bowl, mix soy sauce, honey, rice vinegar, brown sugar, garlic, and ginger. Reserve half for glaze. Add chicken to the remaining marinade and let sit for 15-30 minutes.
  2. Cook the Chicken: Heat a grill or skillet over medium-high heat. Cook chicken for 5-6 minutes per side until fully cooked (165°F internal temp). Brush with reserved glaze in the last 2 minutes.
  3. Thicken the Sauce: Pour remaining marinade into a small saucepan, add cornstarch slurry, and simmer until thickened (2-3 minutes). Slice chicken and toss in sauce.
  4. Make the Slaw: Toss cabbage, carrot, and green onions with rice vinegar, sesame oil, honey, salt, and pepper.
  5. Assemble Tacos: Warm tortillas, then layer with chicken, slaw, cilantro, and sesame seeds. Serve with lime wedges.

Notes

  • For extra heat, add sriracha or red pepper flakes to the teriyaki sauce.
  • Substitute chicken breasts if preferred (adjust cooking time).
  • Slaw can be made ahead—it gets better as it sits!
