- 2 large sweet onions, finely chopped
- 2 tablespoons butter
- 1 cup mayonnaise
- 1 cup sour cream
- 1 cup shredded mild Cheddar cheese
- 1 cup shredded smoked Gouda cheese
- Salt and pepper to taste
- Chopped green onions for garnish (optional)
Instructions
- In a large skillet, melt the butter over medium heat. Add the finely chopped onions, stirring frequently. Cook until the onions are sweet and tender, about 15-20 minutes.
- In a large mixing bowl, combine the mayonnaise, sour cream, shredded mild Cheddar, shredded smoked Gouda, and sautéed onions. Mix until well combined and season generously with salt and pepper.
- Preheat your oven to 350°F (175°C). Transfer the mixture to a baking dish and bake for 25-30 minutes until bubbly and golden on top.
- Remove from the oven and let cool for a minute before garnishing with chopped green onions. Serve warm with chips or crusty bread.
Notes
Store leftovers in an airtight container in the fridge for up to 3 days. Dip can be frozen for 3 months before baking.
