Description

A delightful dessert featuring a sweet cookie crust topped with creamy frosting and a rainbow of fresh fruit.


Ingredients

  • 16 oz cookie dough
  • 8 oz cream cheese, softened
  • 2 Tbsp unsalted butter, softened
  • 2 tsp vanilla extract
  • 2 cups powdered sugar, sifted
  • 2 1/2 cups sliced strawberries
  • 1 cup fresh blueberries
  • 8 oz whipped cream

Instructions

  1. Allow the cookie dough to sit at room temperature for about 1 hour. Preheat your oven to 350°F (175°C).
  2. Lightly spray a baking sheet with non-stick spray and spread the cookie dough evenly on the sheet.
  3. Bake for 12-15 minutes until edges are lightly golden brown, then let cool completely.
  4. In a large bowl, beat together the cream cheese, butter, vanilla, and powdered sugar until smooth.
  5. Spread the cream cheese frosting evenly over the cooled cookie crust.
  6. Artfully arrange the sliced strawberries and blueberries on top of the frosting.
  7. Dollop whipped cream over the fruit just before serving.

Notes

For best results, let the cookie crust cool completely before frosting. Leftovers can be stored in the refrigerator for 2-3 days.
