Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Cream the butter and sugar together in a large mixing bowl until light and fluffy, about 2-3 minutes.
- Add the applesauce, vanilla extract, and egg, mixing until fully combined.
- In a separate bowl, whisk together the flour, baking powder, cinnamon, nutmeg, cloves, and baking soda. Gradually fold this mixture into the wet ingredients, being careful not to overmix.
- Use a tablespoon or cookie scoop to drop rounded dough balls onto the prepared baking sheet, leaving space between each one.
- Bake for 15-18 minutes or until the edges are golden brown and the centers are set.
- Mix the extra brown sugar and cinnamon, then sprinkle over the warm cookies immediately after baking.
- Transfer the cookies to a wire rack to cool completely.
Notes
To keep cookies fresh, store in an airtight container at room temperature for up to five days. The dough can be refrigerated for up to three days before baking.
