Description
A crowd-pleasing layered casserole with seasoned ground beef, beans, corn tortillas, and melted cheese – all the flavors of tacos in an easy baked dish. Perfect for weeknight dinners!

- 1 lb (450g) ground beef (or ground turkey)
- 1 packet (1 oz) taco seasoning
- 1/2 cup water
- 15 oz can black beans, drained and rinsed
- 15 oz can corn kernels, drained
- 10 oz can diced tomatoes with green chiles (Rotel)
- 8 corn tortillas, cut into quarters
- 2 cups shredded Mexican blend cheese
- 1/2 cup sour cream
- 1 cup crushed tortilla chips (for topping)
- Optional toppings: diced avocado, sliced olives, chopped cilantro, jalapeños
Instructions
- Preheat oven to 375°F (190°C). Grease a 9×13 inch baking dish.
- Cook meat: Brown ground beef in skillet over medium heat. Drain excess fat.
- Season: Add taco seasoning and water to meat. Simmer 5 minutes.
- Layer 1: Spread 1/3 of meat mixture in baking dish. Top with half the beans, corn, and tomatoes.
- Layer 2: Arrange half the tortilla pieces over mixture. Spread with 1/2 cup sour cream.
- Repeat: Add another 1/3 meat mixture, remaining beans/corn/tomatoes, then remaining tortillas.
- Final layer: Top with remaining meat mixture, then shredded cheese and crushed chips.
- Bake uncovered for 20-25 minutes until bubbly and cheese is melted.
- Rest 5 minutes before serving with optional toppings.
Notes
- For spicier version, use hot taco seasoning or add 1/2 tsp cayenne
- Vegetarian option: Substitute meat with 2 cups cooked lentils
- Can be assembled ahead and refrigerated before baking (add 10 mins cook time)
- Leftovers reheat well in microwave or oven
