Irresistibly fluffy pancakes made with pumpkin puree and Greek yogurt, perfect for a cozy breakfast.


Ingredients

  • 1 cup all-purpose flour
  • 1 1/2 tsp baking powder
  • 1/2 tsp salt
  • 1 tsp pumpkin pie spice
  • 3/4 cup nonfat Greek yogurt
  • 1/4 cup plain pumpkin puree
  • 2 eggs
  • 1 tsp vanilla extract
  • 1/2 cup unsweetened milk

Instructions

  1. In a mixing bowl, whisk together the flour, baking powder, salt, and pumpkin pie spice.
  2. In another bowl, mix the Greek yogurt, pumpkin puree, eggs, vanilla extract, and milk until smooth.
  3. Gently fold the wet and dry ingredients together until just combined.
  4. Heat a non-stick skillet over medium heat. Lightly grease it and pour about 1/4 cup of batter for each pancake.
  5. Cook until bubbles form, then flip and cook until golden brown. Serve warm.

Notes

For extra fluffiness, sift dry ingredients. You can make the batter the night before for quick cooking in the morning.
