- 2 cups almond flour
- 1/2 cup coconut sugar
- 1/4 cup coconut oil, melted
- 1/4 cup maple syrup
- 1 teaspoon vanilla extract
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- Optional: chocolate chips or nuts for topping
Instructions
- Preheat your oven to 350°F (175°C).
- In a large bowl, mix together the almond flour, coconut sugar, baking soda, and salt.
- In another bowl, combine the melted coconut oil, maple syrup, and vanilla extract.
- Pour the wet ingredients into the dry ingredients and stir until well combined.
- If desired, fold in chocolate chips or nuts.
- Scoop tablespoon-sized portions of dough onto a baking sheet lined with parchment paper, flattening them slightly.
- Bake for 10-12 minutes or until the edges are golden.
- Allow to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
Notes
Store cookies in an airtight container for freshness. They last for about a week at room temperature or up to two weeks in the fridge.
