Delightful cookies made with almond flour and coconut sugar, perfect for any occasion.


Ingredients

  • 2 cups almond flour
  • 1/2 cup coconut sugar
  • 1/4 cup coconut oil, melted
  • 1/4 cup maple syrup
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • Optional: chocolate chips or nuts for topping

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, mix together the almond flour, coconut sugar, baking soda, and salt.
  3. In another bowl, combine the melted coconut oil, maple syrup, and vanilla extract.
  4. Pour the wet ingredients into the dry ingredients and stir until well combined.
  5. If desired, fold in chocolate chips or nuts.
  6. Scoop tablespoon-sized portions of dough onto a baking sheet lined with parchment paper, flattening them slightly.
  7. Bake for 10-12 minutes or until the edges are golden.
  8. Allow to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
