Ingredients

  • 1.5 tbsp taco seasoning
  • 4 ripe avocados
  • 1 cup shredded lettuce
  • 1/2 cup pico de gallo
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup salsa (red or green)

Instructions

  1. Prepare the Meat: Heat a large skillet over medium-high heat. Add the ground beef and diced onion. Cooking for about 6-8 minutes, use a spatula to break up the meat as it sizzles. Cook until the beef is browned, and the onions are translucent.
  2. Season It Up: Stir in the tomato paste and taco seasoning until evenly distributed. Taste and season further if desired.
  3. Prep the Avocados: While the meat is cooking, slice the avocados in half and carefully remove the pits.
  4. Stuff ‘Em: Once the meat is cooked, fill each avocado half with the seasoned beef mixture.
