Description
Delicious Taco Stuffed Avocados combine creamy avocados with a zesty ground beef filling, perfect for any occasion.
Ingredients
Scale
- 1/2 lb 95% lean ground beef
- 1/4 cup onion, diced
- 1 tbsp tomato paste
- 1.5 tbsp taco seasoning
- 4 ripe avocados
- 1 cup shredded lettuce
- 1/2 cup pico de gallo
- 1/2 cup shredded cheddar cheese
- 1/4 cup salsa (red or green)
Instructions
- Prepare the Meat: Heat a large skillet over medium-high heat. Add the ground beef and diced onion. Cooking for about 6-8 minutes, use a spatula to break up the meat as it sizzles. Cook until the beef is browned, and the onions are translucent.
- Season It Up: Stir in the tomato paste and taco seasoning until evenly distributed. Taste and season further if desired.
- Prep the Avocados: While the meat is cooking, slice the avocados in half and carefully remove the pits.
- Stuff ‘Em: Once the meat is cooked, fill each avocado half with the seasoned beef mixture.
- Top It Off: Finish with a sprinkle of shredded lettuce, spoonfuls of pico de gallo, and drizzle with salsa.
- Serve Immediately: Enjoy the Taco Stuffed Avocados while everything is fresh!
Notes
Ensure avocados are at room temperature for best flavor. Store leftover filling separately from the avocado to prevent browning.
