Description

A delightful fusion of Italian pasta and classic taco flavors, this one-pot Taco Pasta is nourishing, customizable, and perfect for weeknight dinners.


Ingredients

  • 1 tbsp olive oil
  • 1 lb 95% lean ground beef or ground turkey/chicken
  • 1 yellow onion, diced
  • 2 bell peppers, diced
  • 2 cloves garlic, minced
  • 3 tbsp taco seasoning
  • 1 tbsp tomato paste
  • 8 oz pasta (of your choice)
  • 14 oz canned diced tomatoes with green chilies (with juice)
  • 15 oz canned black beans, rinsed and drained
  • 1 cup corn (frozen or canned, drained)
  • 2 cups chicken broth
  • 1 cup reduced-fat shredded cheddar cheese

Instructions

  1. Cook the pasta: Begin by boiling water in a medium-sized pot. Cook the pasta until al dente, according to package instructions. Drain and set aside.
  2. Sauté the ingredients: In a large skillet over medium-high heat, add the olive oil. Once it shimmers, add the ground beef (or turkey/chicken). Cook for about 5 minutes, stirring occasionally until browned.
  3. Add vegetables: Throw in the diced yellow onion and bell peppers. Sauté for an additional 3-5 minutes until the onions are translucent and the peppers are softened.
  4. Season and stir: Add the minced garlic, taco seasoning, and tomato paste to the skillet. Cook for 1 minute until fragrant, stirring well to combine.
  5. Incorporate the rest: Stir in the diced tomatoes (with juice), rinsed black beans, corn, and chicken broth, bringing everything to a boil. Reduce the heat to a simmer for 8-12 minutes.
  6. Finish with pasta & cheese: Once the sauce is ready, gently stir in the cooked pasta and shredded cheddar cheese. Allow it to heat thoroughly, seasoning with salt and pepper to taste.
  7. Serve it up: Ladle heaping portions into bowls and top with your favorite taco toppings.
