- 1 tbsp olive oil
- 1 lb 95% lean ground beef or ground turkey/chicken
- 1 yellow onion, diced
- 2 bell peppers, diced
- 2 cloves garlic, minced
- 3 tbsp taco seasoning
- 1 tbsp tomato paste
- 8 oz pasta (of your choice)
- 14 oz canned diced tomatoes with green chilies (with juice)
- 15 oz canned black beans, rinsed and drained
- 1 cup corn (frozen or canned, drained)
- 2 cups chicken broth
- 1 cup reduced-fat shredded cheddar cheese
Instructions
- Cook the pasta: Begin by boiling water in a medium-sized pot. Cook the pasta until al dente, according to package instructions. Drain and set aside.
- Sauté the ingredients: In a large skillet over medium-high heat, add the olive oil. Once it shimmers, add the ground beef (or turkey/chicken). Cook for about 5 minutes, stirring occasionally until browned.
- Add vegetables: Throw in the diced yellow onion and bell peppers. Sauté for an additional 3-5 minutes until the onions are translucent and the peppers are softened.
- Season and stir: Add the minced garlic, taco seasoning, and tomato paste to the skillet. Cook for 1 minute until fragrant, stirring well to combine.
- Incorporate the rest: Stir in the diced tomatoes (with juice), rinsed black beans, corn, and chicken broth, bringing everything to a boil. Reduce the heat to a simmer for 8-12 minutes.
- Finish with pasta & cheese: Once the sauce is ready, gently stir in the cooked pasta and shredded cheddar cheese. Allow it to heat thoroughly, seasoning with salt and pepper to taste.
- Serve it up: Ladle heaping portions into bowls and top with your favorite taco toppings.
