Instructions
- Preheat your oven to 425°F (220°C). Wash, peel, and cut carrots into uniform pieces.
- In a medium bowl, whisk together melted butter, brown sugar, salt, black pepper, ground cinnamon, and apple cider vinegar, until smooth.
- Place carrot pieces in a large mixing bowl and pour glaze over them, tossing to coat.
- Spread carrots on a lined baking sheet in a single layer and roast for 15-20 minutes, tossing halfway.
- Remove from oven and garnish with chopped fresh parsley before serving.
