Description

A delightful medley of flavors featuring sweet potatoes and ground turkey, perfect for breakfast, brunch, or dinner.


Ingredients

  • 1.5 tbsp olive oil
  • 2 tbsp garlic, minced
  • 1 cup yellow onion, diced
  • 1 lb ground turkey
  • 2 sweet potatoes, peeled and cut into 1/2-inch cubes
  • 1.5 bell peppers, diced
  • 3 tsp chili powder
  • 1/4 cup parmesan, grated
  • 1 tsp fresh parsley, chopped
  • Salt to taste
  • Black pepper to taste

Instructions

  1. Peel and cut the sweet potatoes into 1/2-inch cubes, dice the bell peppers, dice the onion, and mince the garlic. Preheat your oven to 425°F (220°C).
  2. In a large oven-safe skillet, heat the olive oil over medium heat. Add the diced onion and minced garlic, stirring frequently until softened and fragrant, about 3-4 minutes.
  3. Increase the heat to medium-high and add the ground turkey to the skillet. Break the meat apart with a spoon as it cooks, stirring until it’s no longer pink and lightly browned, about 5-7 minutes.
  4. Stir in the diced bell peppers, cubed sweet potatoes, and chili powder to the browned turkey mixture. Toss everything together to coat evenly, about 1-2 minutes. Season with salt and black pepper to taste.
  5. Transfer the skillet to the preheated oven and bake uncovered for 20 minutes, stirring halfway through.
  6. Remove from the oven, sprinkle the grated parmesan and fresh chopped parsley over the top, and let it rest for 1-2 minutes.
  7. Divide into bowls or plates and serve immediately.

Notes

Ensure your skillet is hot enough before adding ingredients to avoid steaming. For added crunch, top with toasted pumpkin seeds. Store leftovers in an airtight container for up to 4 days.
