Instructions
- Mix dry ingredients: In a medium bowl, whisk together the flour, baking powder, salt, nutmeg, and cinnamon.
- Combine wet ingredients: In another medium bowl, mix the milk, mashed sweet potatoes, melted butter, eggs, and vanilla extract until well combined and smooth.
- Mix it up: Carefully add the dry ingredients to the wet mixture, gently stirring until just combined.
- Heat the pan: Spray a nonstick skillet or griddle with cooking spray and heat over medium heat.
- Pour the batter: Once hot, pour 1/3 cup of batter into the skillet.
- Cook the pancakes: Allow to cook for 3-4 minutes, then flip and cook for another 3-4 minutes until golden brown.
- Repeat: Wipe out the skillet between batches and repeat until all batter is gone.
- Serve warm: Plate your pancakes and top with maple syrup and whipped cream.
