Ingredients

  • 1/4 cup honey or maple syrup
  • 1/2 cup almond butter
  • 1 egg
  • 1 teaspoon vanilla extract
  • 2 1/2 cups rolled oats
  • 1 teaspoon baking powder

  • 3/4 cup raisins

Instructions

  1. Preheat your oven to 180°C (350°F) and line a baking sheet with parchment paper.
  2. Mix the dry ingredients in a large mixing bowl: rolled oats, baking powder, and cinnamon. Set aside.
  3. Mix the wet ingredients in another bowl: sweet potato puree, honey or maple syrup, almond butter, egg, and vanilla extract until smooth.
  4. Combine the dry mixture with the wet mixture and stir until just combined.
  5. Fold in the raisins, ensuring they are evenly distributed throughout the dough.
  6. Shape the cookie dough into portions and flatten slightly for an even bake.
  7. Bake for 11-13 minutes, or until golden brown. Keep an eye on them at the 10-minute mark.
  8. Cool cookies on the baking sheet before transferring to a wire rack.
