- 1 lb 95% lean ground pork
- 1 tsp kosher salt
- 1/2 tsp black pepper
- 2 garlic cloves, minced
- 1 tbsp ginger, minced
- 12 oz coleslaw mix (shredded green or purple cabbage and carrots)
- 1 cup shelled edamame
- 1/2 cup sweet Thai chili sauce
- 2 cups cooked white rice
- 4 green onions, sliced
- 2 tbsp fresh basil
- 2 tbsp fresh cilantro
Instructions
- Heat the sesame oil over medium-high heat in a large skillet. Add the ground pork, salt, and pepper. Cook for 7 to 9 minutes, breaking it up as it cooks, until it’s browned and cooked through.
- Add the minced garlic and ginger to the pan. Stir and cook for 1 minute until fragrant.
- Toss in the coleslaw mix, edamame, and sweet chili sauce. Cook for another 3 to 5 minutes until the cabbage softens but retains some texture.
- Grab your pre-cooked rice and serve it in bowls. Top each with the ground pork and cabbage mixture, green onions, basil, and cilantro.
- Feel free to drizzle with chili crisp or hot sauce for extra flavor.
