Ingredients

  • 1 tbsp sesame oil
  • 1 lb 95% lean ground pork
  • 1 tsp kosher salt
  • 1/2 tsp black pepper
  • 2 garlic cloves, minced
  • 1 tbsp ginger, minced
  • 12 oz coleslaw mix (shredded green or purple cabbage and carrots)
  • 1 cup shelled edamame
  • 1/2 cup sweet Thai chili sauce
  • 2 cups cooked white rice
  • 4 green onions, sliced
  • 2 tbsp fresh basil
  • 2 tbsp fresh cilantro

Instructions

  1. Heat the sesame oil over medium-high heat in a large skillet. Add the ground pork, salt, and pepper. Cook for 7 to 9 minutes, breaking it up as it cooks, until it’s browned and cooked through.
  2. Add the minced garlic and ginger to the pan. Stir and cook for 1 minute until fragrant.
  3. Toss in the coleslaw mix, edamame, and sweet chili sauce. Cook for another 3 to 5 minutes until the cabbage softens but retains some texture.
  4. Grab your pre-cooked rice and serve it in bowls. Top each with the ground pork and cabbage mixture, green onions, basil, and cilantro.
  5. Feel free to drizzle with chili crisp or hot sauce for extra flavor.
