Description

A quick and easy recipe for moist banana bread made in an air fryer, perfect for breakfast or snacks.


Ingredients

  • 1.75 cups all-purpose flour
  • 1 tsp baking soda
  • 0.75 tsp salt
  • 0.25 tsp ground cinnamon
  • 1 cup granulated sugar
  • 3 large ripe bananas
  • 0.25 cup unsalted butter, at room temperature
  • 1 tsp vanilla extract
  • 1 large egg
  • 0.5 cup pecans, chopped

Instructions

  1. Preheat your air fryer to 330°F (165°C).
  2. Prepare three mini loaf pans by greasing them lightly.
  3. In a bowl, mix together flour, baking soda, salt, and cinnamon.
  4. Mash bananas with sugar until smooth.
  5. Melt the butter and let it cool, then mix with egg and vanilla.
  6. Combine wet and dry ingredients, taking care not to overmix.
  7. Fold in pecans.
  8. Divide the batter into pans and air fry for 20-25 minutes, checking for doneness.
  9. Cool the loaves in the pans for 10 minutes before transferring to a wire rack.

Notes

For a healthier option, substitute whole wheat flour and use less sugar. You can also add chocolate chips or dried fruits for variations.
