Description

Delicious sugar-free chocolate chip cookies that are chewy, rich in chocolate flavor, and perfect for health-conscious indulgence.


Ingredients

  • 1 cup almond flour
  • 1/2 cup unsweetened cocoa powder
  • 1/2 cup sugar-free chocolate chips
  • 1/4 cup coconut oil, melted
  • 1/4 cup erythritol (or another sugar substitute)
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 egg

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, combine the almond flour, cocoa powder, baking soda, and salt. Mix well until there are no lumps.
  3. In another bowl, mix the melted coconut oil, erythritol, vanilla extract, and egg until smooth.
  4. Gradually add the dry ingredients to the wet ingredients. Stir until well combined to form a dough.
  5. Fold in the sugar-free chocolate chips.
  6. Scoop tablespoon-sized amounts of dough onto a lined baking sheet, leaving space between cookies.
  7. Bake for 10-12 minutes until edges are set and centers look slightly underdone.
  8. Let cool on the pan for a few minutes before transferring to a wire rack to cool completely.

Notes

Store in an airtight container at room temperature for up to 5 days. The dough can be refrigerated for up to a week.
