  • 2 stalks celery, diced
  • 1/2 onion, diced
  • 3 cloves garlic, minced or crushed
  • 8 ounces uncooked Italian sausage, casings removed
  • 1 tablespoon fresh chopped thyme, oregano, or rosemary
  • 1 tablespoon chopped fresh sage
  • 1/4 cup fresh chopped parsley
  • 1.5 cups chicken or turkey broth
  • 8 cups croutons or dried stuffing cubes
  • 1 large egg, beaten
  • 1/2 teaspoon kosher salt
  • 1/2 teaspoon black pepper
  • 3-pound turkey breast, deboned and skin-on
  • Salt and black pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large skillet, heat the olive oil or butter over medium heat. Add the diced celery and onion, cooking until softened, about 3-4 minutes.
  3. Stir in the minced garlic and cook for another minute.
  4. Add the Italian sausage, breaking it up and cooking until browned, about 5-7 minutes.
  5. Stir in fresh herbs, parsley, salt, and pepper. Remove from heat.
  6. In a mixing bowl, combine the sautéed mixture with croutons, beaten egg, and chicken broth. Stir to blend and moisten.
  7. Lay the turkey breast flat, season with salt and pepper.
  8. Evenly place the stuffing along the center of the turkey breast, roll tightly, and secure with twine or toothpicks.
  9. Place the stuffed turkey in a roasting pan and roast for 60-75 minutes, checking for an internal temperature of 165°F (74°C).
  10. Allow the turkey to rest for 10 minutes before slicing. Serve alongside extra stuffing if desired.
