- 16 to 20 medium white button or cremini mushrooms, stems removed and finely chopped
- 1 tablespoon butter
- 1 tablespoon olive oil
- 1/4 cup finely chopped onion
- 2 cloves garlic, minced
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 4 ounces cream cheese, softened
- 1/4 cup shredded mozzarella cheese
- 2 tablespoons grated Parmesan cheese
- 1 tablespoon chopped fresh parsley, plus extra for garnish
- 2 tablespoons breadcrumbs (optional)
Instructions
- Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper.
- Finely chop the mushroom stems and sauté them with olive oil and garlic for 2–3 minutes until softened. Let cool slightly.
- In a bowl, combine sautéed stems, breadcrumbs, Parmesan, cream cheese, parsley, salt, and pepper.
- Stuff each mushroom cap with the filling and place on the prepared baking sheet.
- Bake for 18–20 minutes or until the tops are golden and the mushrooms are tender.
- Serve warm and enjoy.
Notes
- You can prepare the filling in advance and refrigerate it until ready to stuff.
- Try adding cooked sausage or chopped nuts for variation.
- These mushrooms are best served warm but can be reheated in the oven.
