    1. 16 to 20 medium white button or cremini mushrooms, stems removed and finely chopped
    2. 1 tablespoon butter
    3. 1 tablespoon olive oil
    4. 1/4 cup finely chopped onion
    5. 2 cloves garlic, minced
    6. 1/2 teaspoon salt
    7. 1/4 teaspoon black pepper
    8. 4 ounces cream cheese, softened
    9. 1/4 cup shredded mozzarella cheese
    10. 2 tablespoons grated Parmesan cheese
    11. 1 tablespoon chopped fresh parsley, plus extra for garnish
    12. 2 tablespoons breadcrumbs (optional)

Instructions

  1. Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper.
  2. Finely chop the mushroom stems and sauté them with olive oil and garlic for 2–3 minutes until softened. Let cool slightly.
  3. In a bowl, combine sautéed stems, breadcrumbs, Parmesan, cream cheese, parsley, salt, and pepper.
  4. Stuff each mushroom cap with the filling and place on the prepared baking sheet.
  5. Bake for 18–20 minutes or until the tops are golden and the mushrooms are tender.
  6. Serve warm and enjoy.
