- 3 cups all-purpose flour
- 1 cup fine semolina (plus extra for folding)
- 1½ teaspoons salt
- 1½ cups warm water
- 1 tablespoon vegetable oil (for mixing)
- ½ cup vegetable oil (for shaping and cooking)
- ½ cup melted butter (optional)
- 3 medium onions (finely chopped)
- 1 small bunch fresh parsley (finely chopped)
- 1 small bunch fresh cilantro (finely chopped)
- 1 teaspoon paprika
- ½ teaspoon ground cumin
- ¼ teaspoon turmeric
- Salt and pepper (to taste)
- 2 tablespoons olive oil (for sautéing)
Instructions
- In a large mixing bowl, combine 3 cups all-purpose flour, 1 cup fine semolina, and 1½ teaspoons salt.
- Gradually mix in 1½ cups warm water and 1 tablespoon vegetable oil. Knead until smooth and elastic (about 8-10 minutes).
- Cover with a damp cloth and let it rest for 30 minutes.
- In a skillet, heat 2 tablespoons of olive oil over medium heat. Sauté finely chopped onions until soft and golden (about 5-7 minutes).
- Add parsley, cilantro, paprika, cumin, turmeric, salt, and pepper. Cook for another 2 minutes until fragrant. Set aside to cool.
- Divide dough into equal-sized balls (about 8-10).
- On a floured surface, flatten each ball into a thin disk.
- Place a spoonful of the cooled filling in the center of each disk.
- Fold the sides over the filling, sealing it in, and form a secure patty.
- In a skillet, heat ½ cup vegetable oil over medium heat. Cook each filled msemen until golden brown (about 3-4 minutes per side).
Notes
Use high-quality fresh herbs for best flavor. Sweet onions like Vidalia or Walla Walla are recommended for the filling.
