Ingredients

- 2 pounds of potatoes
- 1/2 cup of milk
- 1/4 cup of butter
- 1/2 cup of shredded cheese
- 1/2 cup of cooked bacon or sausage
- Salt and pepper to taste
- 1/4 cup of chopped green onions or chives
Instructions
- Boil the potatoes in salted water until tender, about 15-20 minutes.
- Drain and mash the potatoes with milk, butter, salt, and pepper until creamy.
- Preheat the oven to 400°F (200°C).
- Grease a muffin tin and scoop mashed potatoes into each cup to form nests.
- Fill each nest with cheese and bacon or sausage.
- Top with more mashed potatoes to cover the filling.
- Bake in the oven for 20-25 minutes until golden brown.
- Garnish with chopped green onions before serving.
Notes
These nests can be made ahead of time and refrigerated or frozen for later use.
