Description

A nostalgic treat combining chewy oats with sweet strawberries, perfect for snacks or desserts.


Ingredients

  • 1 cup rolled oats
  • 3/4 cup all-purpose flour
  • 1/2 cup brown sugar or coconut sugar
  • 1 tsp ground ginger
  • 1 tsp cinnamon
  • 1/4 tsp salt
  • 1/2 cup unsalted butter, melted
  • 1 tsp cornstarch or 2 tsp arrowroot powder
  • 2 cups strawberries, chopped
  • 2 tbsp lemon juice or orange juice
  • 1 tbsp brown sugar for topping
  • 1/2 cup powdered sugar (optional)
  • 1/2 tsp vanilla extract
  • 1 tbsp milk (plant-based if desired)

Instructions

  1. Preheat the oven to 190°C (375°F) and prepare a 20×20 cm baking pan.
  2. Chop the strawberries and set aside.
  3. In a bowl, mix rolled oats, flour, brown sugar, ginger, cinnamon, and salt.
  4. Combine melted butter with the dry mixture, reserve 1/2 cup for topping, and press the rest into the pan.
  5. Layer the strawberries on the pressed base, sprinkle with cornstarch, juice, and brown sugar.
  6. Top with the reserved oat mixture.
  7. Bake for 35-40 minutes until golden brown.
  8. Cool, cut into bars, and optionally drizzle with glaze made from powdered sugar, vanilla, and milk.

Notes

Store in an airtight container at room temperature for up to 3 days, or refrigerate for a week.
