Description

Delicious brownies with a fudgy base topped with light strawberry cheesecake mousse, perfect for any occasion.


Ingredients

  • 1 tablespoon cornstarch
  • 1/3 cup Dutch processed cocoa powder
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon kosher salt
  • 4 large eggs, room temperature
  • 2 cups granulated sugar
  • 3/4 cup unsalted butter, melted
  • 2 teaspoons vanilla extract
  • 1 recipe strawberry cheesecake mousse, prepared
  • Fresh strawberries for garnish

Instructions

  1. Preheat your oven to 350°F (175°C). Line a 9×13 inch baking dish with parchment paper.
  2. Whisk together the flour, cornstarch, cocoa powder, baking powder, and kosher salt.
  3. Mix the eggs, granulated sugar, melted butter, and vanilla extract until light and fluffy.
  4. Combine the dry ingredients into the wet mixture, mixing on low until just combined.
  5. Bake for 30-35 minutes or until edges are set and center is shiny.
  6. Cool the brownies to room temperature and prepare the mousse.
  7. Top the cooled brownies with mousse and garnish with fresh strawberries.
