Description

A sweet and chewy Japanese treat filled with fresh strawberries, perfect for any occasion.

Ingredients

Scale
  • 1 cup glutinous rice flour
  • 1/4 cup sugar
  • 3/4 cup water
  • 1/2 cup strawberries, diced
  • Cornstarch for dusting

Instructions

  1. Mix the glutinous rice flour, sugar, and water in a bowl until smooth.
  2. Pour the mixture into a microwave-safe dish and cover it with plastic wrap.
  3. Microwave on high for 1 minute, then stir and repeat until sticky and shiny.
  4. Dust a clean surface with cornstarch and pour the hot mochi mixture onto it.
  5. Knead the mixture gently until manageable, dusting hands with cornstarch as needed.
  6. Divide the mochi into small pieces and flatten each piece into a circle.
  7. Place diced strawberry in the center, and wrap the mochi around it to seal.
  8. Refrigerate in an airtight container or serve immediately.

Notes

Avoid overcooking the mochi to prevent toughness. Store in an airtight container with cornstarch to prevent sticking.
