- 1 cup unsalted butter, softened
- 1 cup granulated sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 2 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 tablespoon lemon zest
- 1/4 cup lemon juice
- 1 cup strawberries, pureed
- 1 cup powdered sugar
- 1/2 cup butter, softened (for frosting)
- 1 teaspoon lemon extract
Instructions
- Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Cream together the butter and sugar until light and fluffy, about 3-4 minutes.
- Beat in the egg and vanilla extract until well combined.
- In another bowl, whisk together the flour, baking soda, salt, and lemon zest.
- Gradually add the dry ingredients into the wet mixture, mixing until just combined.
- Stir in the lemon juice and strawberry puree until well incorporated.
- Drop spoonfuls of dough onto the prepared baking sheet, spacing them about 2 inches apart.
- Bake for 10-12 minutes or until the edges are lightly golden.
- Allow them to cool on the baking sheet for a few minutes before transferring to a wire rack.
- For the frosting, beat the softened butter with powdered sugar and lemon extract until creamy and smooth.
- Top each cookie with a dollop of strawberry buttercream.
Notes
Use fresh organic strawberries for the best flavor. For a lighter version, swap refined sugar for monk fruit.
