- 1 cup light brown sugar, packed

- 1/2 cup strawberries, fresh or frozen
- 1 cup confectioners’ sugar
- 1 tablespoon heavy cream
Instructions
- Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Whisk together the rolled oats, flour, baking powder, baking soda, salt, cinnamon, and nutmeg in a large mixing bowl.
- Beat the butter and brown sugar in a stand mixer on low speed until smooth and creamy.
- Add the eggs, molasses, and vanilla, mixing until well incorporated.
- Gradually add the dry ingredients to the wet mixture until just combined.
- Drop dough onto the prepared baking sheet and gently flatten slightly with your palm.
- Bake for 7-8 minutes until slightly doughy and soft in the center.
- Let cool on the baking sheet for a few minutes before transferring to a wire rack.
- Blend the strawberries, confectioners’ sugar, and heavy cream in a food processor until smooth for the glaze.
- Drizzle the glaze over the cooled cookies and allow to set before serving.
Notes
For best results, use room temperature ingredients and avoid over-mixing the dough.
