Description

A delightful blend of creamy cheesecake and sweet strawberry preserves, topped with a buttery crumble for a perfect dessert experience.


Ingredients

  • 1 cup (84 g) graham cracker crumbs
  • 1 tablespoon granulated sugar
  • 3 tablespoons unsalted butter, melted
  • 1/2 cup (62.5 g) all-purpose flour
  • 3 tablespoons brown sugar, packed
  • 3 tablespoons granulated sugar
  • 1 tablespoon cornstarch
  • 1/2 teaspoon ground cinnamon
  • 1/4 cup (57 g) unsalted butter, melted
  • 2 packages (8 ounces each) cream cheese, softened
  • 3/4 cup (167 g) superfine granulated sugar
  • 1/4 cup (57.5 g) sour cream, room temperature
  • 1 teaspoon vanilla extract
  • 3 large eggs, room temperature
  • 1/2 cup (160 g) strawberry preserves
  • 1 cup (125 g) confectioners’ sugar
  • 1 tablespoon whole milk

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 7-inch springform pan and line with parchment paper.
  2. Prepare the crust by combining graham cracker crumbs, granulated sugar, and melted butter; press into the bottom of the pan and bake for 10 minutes.
  3. Make the crumble topping by mixing flour, brown sugar, granulated sugar, cornstarch, and cinnamon; stir in melted butter to form crumbs.
  4. Beat softened cream cheese and superfine sugar in a stand mixer; add sour cream and vanilla, mixing until smooth.
  5. Add eggs one at a time, mixing well after each addition; gently fold in strawberry preserves.
  6. Combine the cheesecake filling with the cooled crust and top with crumble mixture.
  7. Bake in a water bath for 85-90 minutes until the top is golden and the center is set; cool on a wire rack and refrigerate for at least 4 hours.
  8. Glaze with a mixture of confectioners’ sugar and milk before serving.

Notes

Best served chilled; can be made a day in advance. Store leftovers in the refrigerator for up to 5 days or freeze for up to 1 month.
