- 1 1/2 cups graham cracker crumbs
- 1/2 cup unsalted butter, melted
- 2 tablespoons granulated sugar
- 6 cups fresh strawberries, cleaned and quartered
- 3/4 cup granulated sugar
- 2 tablespoons cornstarch
- 1 tablespoon water
- 1 package cream cheese, softened
- 1/2 cup confectioners’ sugar
- 1 teaspoon vanilla extract
- 1 cup heavy whipping cream, whipped
- Whipped cream for serving
Instructions
- Mix the graham cracker crumbs, melted butter, and 2 tablespoons of granulated sugar until well combined.
- Press this mixture into a 9-inch pie pan to form the crust and bake at 350°F for about 10 minutes or until lightly golden. Let cool.
- Combine 2 cups of quartered strawberries, 3/4 cup granulated sugar, cornstarch, and 1 tablespoon water in a saucepan over medium-low heat.
- Cook the mixture until thick (~5 minutes), then bring to a gentle boil, stirring constantly for another minute. Remove from heat and let cool completely.
- Beat the softened cream cheese, confectioners’ sugar, and vanilla extract until smooth and creamy.
- Gradually add the whipped heavy cream, beating until thick and fluffy.
- Spread the cream cheese filling evenly over the cooled crust.
- Fold in remaining quartered strawberries into the cooled strawberry topping and pour this over the cream cheese layer.
- Serve immediately with whipped cream or refrigerate until ready.
Notes
Store leftovers in an airtight container in the fridge for up to 2-3 days. Prepare the crust and filling a day in advance, and assemble before serving.
