Description

A refreshing Strawberry Cream Cheese Pie combining a buttery graham cracker crust with rich cream cheese filling and luscious strawberries.


Ingredients

  • 1 1/2 cups graham cracker crumbs
  • 1/2 cup unsalted butter, melted
  • 2 tablespoons granulated sugar
  • 6 cups fresh strawberries, cleaned and quartered
  • 3/4 cup granulated sugar
  • 2 tablespoons cornstarch
  • 1 tablespoon water
  • 1 package cream cheese, softened
  • 1/2 cup confectioners’ sugar
  • 1 teaspoon vanilla extract
  • 1 cup heavy whipping cream, whipped
  • Whipped cream for serving

Instructions

  1. Mix the graham cracker crumbs, melted butter, and 2 tablespoons of granulated sugar until well combined.
  2. Press this mixture into a 9-inch pie pan to form the crust and bake at 350°F for about 10 minutes or until lightly golden. Let cool.
  3. Combine 2 cups of quartered strawberries, 3/4 cup granulated sugar, cornstarch, and 1 tablespoon water in a saucepan over medium-low heat.
  4. Cook the mixture until thick (~5 minutes), then bring to a gentle boil, stirring constantly for another minute. Remove from heat and let cool completely.
  5. Beat the softened cream cheese, confectioners’ sugar, and vanilla extract until smooth and creamy.
  6. Gradually add the whipped heavy cream, beating until thick and fluffy.
  7. Spread the cream cheese filling evenly over the cooled crust.
  8. Fold in remaining quartered strawberries into the cooled strawberry topping and pour this over the cream cheese layer.
  9. Serve immediately with whipped cream or refrigerate until ready.

Notes

Store leftovers in an airtight container in the fridge for up to 2-3 days. Prepare the crust and filling a day in advance, and assemble before serving.
