Instructions
- Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
- Whisk together the flour, sugar, baking powder, baking soda, and salt until well combined.
- Combine the milk, vegetable oil, egg, and vanilla extract in another bowl, whisking until smooth and creamy.
- Pour the wet mixture into the dry ingredients, stirring gently until just combined. Fold in the chopped strawberries, ensuring they are evenly distributed.
- Mix the softened cream cheese with powdered sugar until smooth and creamy.
- Fill each muffin cup halfway with the batter. Add a teaspoon of the cream cheese mixture in the center, then top with more batter until each cup is about two-thirds full.
- Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean. Allow to cool before serving.
Notes
Serve dusted with powdered sugar and fresh strawberries. Pairs well with iced tea or coffee.
