- 1 package (3 ounces) strawberry gelatin
- 1/4 cup cold water
- 1 package (8 ounces) cream cheese, softened
- 1/2 cup confectioners’ sugar
- 1/4 cup sour cream
- 1 teaspoon vanilla extract
- 1 cup heavy whipping cream
Instructions
- Prepare the gelatin: In a small bowl, whisk together strawberry gelatin and cold water until mostly dissolved. Set aside for about 5 minutes to bloom.
- Make the cheesecake base: In a stand mixer, mix cream cheese on medium speed for about 2-3 minutes until smooth and creamy.
- Add sweetness and flavor: Gradually add in confectioners’ sugar, strawberry gelatin, sour cream, and vanilla extract. Mix on low until well combined.
- Whip up some cream: In a separate bowl, whip your heavy cream until stiff peaks form, about 4-5 minutes.
- Combine: Gently fold the whipped cream into the cream cheese mixture in three additions.
- Transfer and chill: Spoon the mixture into serving dishes and refrigerate for about 1-2 hours until set.
Notes
For a thicker mousse, chill overnight. Avoid over-beating your whipped cream.
