Description

A decadent yet light dessert combining the creamy decadence of cheesecake with the airy texture of mousse, featuring fresh strawberries.


Ingredients

  • 1 package (3 ounces) strawberry gelatin
  • 1/4 cup cold water
  • 1 package (8 ounces) cream cheese, softened
  • 1/2 cup confectioners’ sugar
  • 1/4 cup sour cream
  • 1 teaspoon vanilla extract
  • 1 cup heavy whipping cream

Instructions

  1. Prepare the gelatin: In a small bowl, whisk together strawberry gelatin and cold water until mostly dissolved. Set aside for about 5 minutes to bloom.
  2. Make the cheesecake base: In a stand mixer, mix cream cheese on medium speed for about 2-3 minutes until smooth and creamy.
  3. Add sweetness and flavor: Gradually add in confectioners’ sugar, strawberry gelatin, sour cream, and vanilla extract. Mix on low until well combined.
  4. Whip up some cream: In a separate bowl, whip your heavy cream until stiff peaks form, about 4-5 minutes.
  5. Combine: Gently fold the whipped cream into the cream cheese mixture in three additions.
  6. Transfer and chill: Spoon the mixture into serving dishes and refrigerate for about 1-2 hours until set.
