A sweet twist on a classic dessert, these Strawberry Cheesecake Cookies feature a creamy cheesecake filling and fresh strawberries wrapped in a soft, buttery cookie.

- 1 cup finely diced fresh strawberries
- 1/4 cup granulated sugar (for strawberries)
- 8 oz cream cheese, softened
- 1/4 cup granulated sugar (for the filling)
- 1/2 tsp vanilla extract
- 1 cup unsalted butter, softened
- 1 cup granulated sugar
- 1 large egg
- 1 tsp vanilla extract
- 3 cups all-purpose flour
- 1/2 tsp baking powder
- 1/4 tsp salt
- 1/3 cup homemade thick strawberry jam
Instructions
- In a medium saucepan, combine the strawberries and granulated sugar. Cook over medium heat until thickened.
- In a mixing bowl, beat cream cheese, granulated sugar, and vanilla extract until smooth. Divide into portions and freeze.
- In a large mixing bowl, beat butter and granulated sugar until light and fluffy. Add egg and vanilla, mixing until pale.
- Whisk together flour, baking powder, and salt. Gradually add to the butter mixture until just combined.
- Layer strawberry jam between divided dough sections and fold to create pockets of jam.
- Scoop dough portions, flatten, and encase frozen cheesecake discs. Shape into disks.
- Preheat oven to 350°F (180°C) and bake for 11-12 minutes. Cool before serving.
Notes
Store cookies in an airtight container. They can be prepared in advance.
