Description

A sweet twist on a classic dessert, these Strawberry Cheesecake Cookies feature a creamy cheesecake filling and fresh strawberries wrapped in a soft, buttery cookie.


Ingredients

  • 1 cup finely diced fresh strawberries
  • 1/4 cup granulated sugar (for strawberries)
  • 8 oz cream cheese, softened
  • 1/4 cup granulated sugar (for the filling)
  • 1/2 tsp vanilla extract
  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 3 cups all-purpose flour
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1/3 cup homemade thick strawberry jam

Instructions

  1. In a medium saucepan, combine the strawberries and granulated sugar. Cook over medium heat until thickened.
  2. In a mixing bowl, beat cream cheese, granulated sugar, and vanilla extract until smooth. Divide into portions and freeze.
  3. In a large mixing bowl, beat butter and granulated sugar until light and fluffy. Add egg and vanilla, mixing until pale.
  4. Whisk together flour, baking powder, and salt. Gradually add to the butter mixture until just combined.
  5. Layer strawberry jam between divided dough sections and fold to create pockets of jam.
  6. Scoop dough portions, flatten, and encase frozen cheesecake discs. Shape into disks.
  7. Preheat oven to 350°F (180°C) and bake for 11-12 minutes. Cool before serving.
