Ingredients

  • 3 tablespoons granulated sugar, divided
  • 2 1/2 cups all-purpose flour
  • 4 teaspoons baking powder
  • 2 cups buttermilk
  • 1/2 cup unsalted butter, melted
  • 1 cup confectioners’ sugar (for optional glaze)
  • 23 tablespoons whole milk (for optional glaze)

Instructions

  1. Preheat your oven to 450°F (232°C).
  2. Toss the strawberries: In a small bowl, combine 3/4 cup of diced strawberries with 2 tablespoons of sugar and set aside.
  3. Mix dry ingredients: In a medium bowl, whisk together the flour, baking powder, and remaining tablespoon of sugar until well combined.
  4. Incorporate buttermilk: Pour in the buttermilk and stir gently until mostly combined.
  5. Fold in strawberries: Carefully fold in the sugar-coated strawberries along with any juices.
  6. Prepare the baking dish: Pour the melted butter into an 8×8 inch baking dish.
  7. Spread the dough: Place the biscuit dough on top of the melted butter and spread evenly.
  8. Score the dough: Score the unbaked dough into 9 squares using a sharp knife.
  9. Add remaining strawberries: Top with the remaining diced strawberries.
  10. Bake to perfection: Bake for 30-32 minutes until golden brown.
  11. Let them swim in butter: Allow the biscuits to absorb the butter for a few minutes as they cool.
  12. Make the optional glaze: In a small bowl, whisk together confectioners’ sugar and milk, and drizzle over warm biscuits if desired.
