- 1 cup fresh strawberries, washed, hulled, diced, divided
- 3 tablespoons granulated sugar, divided
- 2 1/2 cups all-purpose flour
- 4 teaspoons baking powder
- 2 cups buttermilk
- 1/2 cup unsalted butter, melted
- 1 cup confectioners’ sugar (for optional glaze)
- 2–3 tablespoons whole milk (for optional glaze)
Instructions
- Preheat your oven to 450°F (232°C).
- Toss the strawberries: In a small bowl, combine 3/4 cup of diced strawberries with 2 tablespoons of sugar and set aside.
- Mix dry ingredients: In a medium bowl, whisk together the flour, baking powder, and remaining tablespoon of sugar until well combined.
- Incorporate buttermilk: Pour in the buttermilk and stir gently until mostly combined.
- Fold in strawberries: Carefully fold in the sugar-coated strawberries along with any juices.
- Prepare the baking dish: Pour the melted butter into an 8×8 inch baking dish.
- Spread the dough: Place the biscuit dough on top of the melted butter and spread evenly.
- Score the dough: Score the unbaked dough into 9 squares using a sharp knife.
- Add remaining strawberries: Top with the remaining diced strawberries.
- Bake to perfection: Bake for 30-32 minutes until golden brown.
- Let them swim in butter: Allow the biscuits to absorb the butter for a few minutes as they cool.
- Make the optional glaze: In a small bowl, whisk together confectioners’ sugar and milk, and drizzle over warm biscuits if desired.
Notes
For enhanced flavor, opt for organic strawberries. Measure flour correctly to avoid dense biscuits.
