Description

A quick and flavorful stir-fried water spinach dish packed with garlic and spices, perfect for any meal.


Ingredients

Scale
  • 1 bundle water spinach (about 12.5 ounces or 350 grams)
  • 4 cloves garlic
  • 4 red Thai chilies
  • 1 tablespoon olive oil
  • 1 tablespoon oyster sauce
  • 1 1/2 tablespoons fermented soybean paste

Instructions

  1. Prepare the water spinach by chopping off the roots and a few inches of the stalks. Rinse and chop into pieces.
  2. Prep the aromatics by pounding garlic and chilies together.
  3. Heat the oil in a pan over medium-high heat until shimmering.
  4. Sauté the garlic and chili mixture for 1-2 minutes until fragrant.
  5. Cook the water spinach for about 2 minutes, stirring constantly.
  6. Add the oyster sauce and fermented soybean paste, continuing to stir-fry for another 2 minutes.

Notes

Best served fresh; can store leftovers in the fridge for up to 2 days.
