Ingredients

- 1 bundle water spinach (about 12.5 ounces or 350 grams)
- 4 cloves garlic
- 4 red Thai chilies
- 1 tablespoon olive oil
- 1 tablespoon oyster sauce
- 1 1/2 tablespoons fermented soybean paste
Instructions
- Prepare the water spinach by chopping off the roots and a few inches of the stalks. Rinse and chop into pieces.
- Prep the aromatics by pounding garlic and chilies together.
- Heat the oil in a pan over medium-high heat until shimmering.
- Sauté the garlic and chili mixture for 1-2 minutes until fragrant.
- Cook the water spinach for about 2 minutes, stirring constantly.
- Add the oyster sauce and fermented soybean paste, continuing to stir-fry for another 2 minutes.
Notes
Best served fresh; can store leftovers in the fridge for up to 2 days.
