Description

Delicious homemade Pumpkin Cream Cheese Muffins inspired by Starbucks, perfect for fall with warm spices and a creamy filling.


Ingredients

  • 1 cup pumpkin puree
  • 1 cup sugar
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/4 teaspoon cloves
  • 1/2 teaspoon salt
  • 8 oz cream cheese, softened
  • 1/4 cup powdered sugar
  • 1 teaspoon vanilla extract
  • Candied pumpkin seeds or pepitas (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a large bowl, mix together the pumpkin puree, sugar, and vegetable oil until well combined.
  3. Crack in the eggs one at a time, mixing well after each addition.
  4. In a separate bowl, whisk together the flour, baking soda, baking powder, spices, and salt.
  5. Gradually add the dry ingredients to the wet mixture, stirring until just combined.
  6. In another bowl, beat together the softened cream cheese, powdered sugar, and vanilla extract until smooth.
  7. Scoop about half of the pumpkin batter into each muffin cup, add a dollop of cream cheese mixture, then top with more pumpkin batter.
  8. If desired, sprinkle candied pumpkin seeds on top.
  9. Bake for 20-25 minutes until a toothpick inserted comes out clean.
  10. Cool in the pan for 5 minutes, then transfer to a wire rack.

Notes

For extra flavor, consider adding chocolate chips or nuts. Store in an airtight container.
