A delightful blend of spinach, crispy bacon, and warm bacon vinaigrette, creating a cozy and flavorful salad perfect for any occasion.


Ingredients

Scale
  • 4 Slices of Bacon
  • 4 cups Fresh Spinach
  • ½ cup Cherry Tomatoes
  • ⅓ cup Toasted Walnuts
  • 1 Shallot
  • ⅓ cup Crumbled Feta
  • 2 tbsp Reserved Bacon Fat
  • 3 tbsp Lemon Juice
  • 2 tbsp Red Wine Vinegar
  • ½ tsp Thyme
  • 2 tbsp Honey
  • 3 tbsp Olive Oil
  • ¼ tsp Salt
  • ¼ tsp Pepper

Instructions

  1. Cook the bacon until crispy, then reserve 2 tablespoons of bacon fat.
  2. Prepare the vegetables: thinly slice the shallots and cut the cherry tomatoes.
  3. Make the vinaigrette by mixing the reserved bacon fat, lemon juice, red wine vinegar, honey, thyme, salt, and pepper, then whisk in olive oil.
  4. Toss spinach with vinaigrette, then add bacon bits, shallots, tomatoes, walnuts, and feta. Serve immediately.

Notes

Customize the salad with roasted vegetables or different cheeses. Best served fresh, but dressing can be stored for up to a week.
