Ingredients

  • 1 package (about 17 oz) frozen chopped spinach, thawed and squeezed dry
  • 8 oz cream cheese, softened
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 egg, beaten (plus 1 egg for egg wash)
  • 1 tsp dried dill (or fresh, chopped)
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 package (about 17.3 oz) frozen puff pastry sheets, thawed
  • Optional: pinch of nutmeg

Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a large bowl, combine the thawed spinach, cream cheese, mozzarella, Parmesan, onion, garlic, beaten egg, dill, salt, pepper, and optional nutmeg. Mix well.
  3. On a lightly floured surface, roll out the puff pastry and cut into squares or circles, about 3 inches in diameter.
  4. Spoon about a tablespoon of filling onto the center of each pastry piece.
  5. Fold the pastry over the filling and seal the edges using a fork or by pinching with fingers.
  6. Brush the tops with the remaining beaten egg for a golden finish.
  7. Bake for 15–20 minutes, or until puffed and golden brown.
  8. Let cool slightly before serving.

Notes

For best texture, don’t overload the pastry. Leftovers can be stored in an airtight container in the fridge for up to 3 days.
