- 0.75 lb Ground Sausage
- Salt and Pepper to taste
- 1 Onion, Finely Diced
- 1 tbsp Olive Oil
- 4 Garlic Cloves, Minced
- 2 tbsp Tomato Paste
- 24 oz Marinara Sauce
- 0.5 tsp Red Pepper Flakes (optional)
- 2 tbsp Fresh Parsley, Chopped
- 0.75 tsp Oregano
- 1.5 tsp Basil
- 8 cups Chicken Broth
- 9 Lasagna Noodles, Broken into 1-inch Pieces
- 2 cups Spinach, Stems Removed
- 1/4 cup Red Wine
- 12 oz Ricotta
- 1.25 cup Mozzarella, Shredded
- 0.75 cup Parmesan, Grated
- Fresh Basil for garnish
Instructions
- Heat a large pot or Dutch oven over medium-high heat. Add the ground beef and ground sausage, breaking them into small pieces. Cook for 8-10 minutes until browned. Transfer the meat to a plate, leaving 1 tablespoon of fat in the pot.
- In the same pot with the reserved fat, add olive oil and reduce heat to medium. Cook the finely diced onion until softened, about 5 minutes. Add minced garlic and cook for an additional 2 minutes until fragrant. Stir in tomato paste and cook for 1-2 minutes to deepen the flavor.
- Pour in marinara sauce, red wine, and chicken broth, stirring to combine. Add the cooked meat back to the pot along with red pepper flakes, oregano, basil, and parsley. Bring to a boil and let it simmer for about 5 minutes.
- Add the broken lasagna noodles to the pot. Increase the heat to a gentle boil, then reduce to medium-low. Cook uncovered for 10-12 minutes until the noodles are tender, adding more broth or water if it becomes too thick.
- Remove stems from the spinach and chop the leaves roughly. In a bowl, mix ricotta, mozzarella, and parmesan until blended. Once noodles are tender, stir in the spinach and cook for an additional 1-2 minutes until wilted.
- Ladle soup into bowls and top with the cheese mixture, allowing it to melt slightly. Finish with fresh basil for that pop of color and flavor.
Notes
For a creamier soup, consider adding a splash of heavy cream just before serving. Use high-quality brands for sauces and cheeses for better flavor.
