Description

A creamy, comforting casserole packed with tender chicken, nutritious spinach, and a rich cheese sauce, topped with a golden breadcrumb crust for the perfect weeknight dinner.


Ingredients

2 cups cooked chicken, shredded

2 cups fresh spinach, chopped

8 oz cream cheese, softened

1 cup shredded mozzarella cheese

1/2 cup sour cream

1/2 cup chicken broth

1 teaspoon garlic powder

1 teaspoon onion powder

Salt and pepper to taste

1/2 teaspoon red pepper flakes (optional)

1/2 cup breadcrumbs (for topping)


Instructions

  1. Preheat oven to 375°F (190°C). Grease a 9×13-inch baking dish.
  2. In skillet over medium heat, sauté onion and garlic until soft (3 mins). Add spinach and cook until wilted (2 mins). Drain excess liquid.
  3. In large bowl, mix cream cheese, sour cream, and broth until smooth. Stir in chicken, spinach mixture, 1/2 cup mozzarella, Parmesan, and seasonings.
  4. Transfer to baking dish. Top with remaining mozzarella.
  5. Combine breadcrumbs with melted butter; sprinkle over casserole.
  6. Bake 25-30 minutes until bubbly and golden brown. Let stand 5 minutes before serving.

Notes

  • For crunchier topping, use panko breadcrumbs
  • Add 1 cup sliced mushrooms with the onions for extra flavor
  • Can substitute ricotta for half the cream cheese
  • Freezes well before baking – add 10 mins to cooking time
