Ingredients
2 cups cooked chicken, shredded
2 cups fresh spinach, chopped
8 oz cream cheese, softened
1 cup shredded mozzarella cheese
1/2 cup sour cream
1/2 cup chicken broth
1 teaspoon garlic powder
1 teaspoon onion powder
Salt and pepper to taste
1/2 teaspoon red pepper flakes (optional)
1/2 cup breadcrumbs (for topping)
Instructions
- Preheat oven to 375°F (190°C). Grease a 9×13-inch baking dish.
- In skillet over medium heat, sauté onion and garlic until soft (3 mins). Add spinach and cook until wilted (2 mins). Drain excess liquid.
- In large bowl, mix cream cheese, sour cream, and broth until smooth. Stir in chicken, spinach mixture, 1/2 cup mozzarella, Parmesan, and seasonings.
- Transfer to baking dish. Top with remaining mozzarella.
- Combine breadcrumbs with melted butter; sprinkle over casserole.
- Bake 25-30 minutes until bubbly and golden brown. Let stand 5 minutes before serving.
Notes
- For crunchier topping, use panko breadcrumbs
- Add 1 cup sliced mushrooms with the onions for extra flavor
- Can substitute ricotta for half the cream cheese
- Freezes well before baking – add 10 mins to cooking time
