  • 2 makrut lime leaves (optional)
  • 1 tablespoon sugar
  • 2 1/2 teaspoon paprika
  • 2 1/2 teaspoon cayenne pepper
  • 1 teaspoon lime juice powder
  • 1 1/2 teaspoon table salt

Instructions

  1. Prepare the Chicken: Trim any excess skin off the drumettes, ensuring a clean look. Marinate the wings in fish sauce for about 20 minutes to enhance flavor and tenderness.
  2. Toast the Jasmine Rice: In a small skillet, toast the jasmine rice and optional makrut lime leaves over medium-high heat until the leaves are dry and the rice is dark brown, aromatic (about 5-7 minutes). Remove the lime leaves and grind the mixture to a fine powder using a spice grinder or mortar and pestle.
  3. Combine Spices: In a medium bowl, combine the ground rice, cayenne, paprika, lime powder, sugar, and salt for a homemade Zabb seasoning.
  4. Prepare the Coating: In another bowl, mix the flour and cornstarch. Toss the marinated wings in this mixture to fully coat them. Drizzle with water to create a slightly clumpy texture, perfect for frying.
  5. Fry the Wings: Heat oil in a wok or deep pot to 375°F (190°C). Carefully fry wings in batches for approximately 6-8 minutes, or until they reach an internal temperature of 165°F (preferably 175°F for an extra crispy wing). They should be golden brown.
  6. Season the Wings: As each batch finishes, remove them from the oil. Sprinkle with the Zabb powder mix while the wings are still hot, tossing well to ensure even coating.
  7. Cool Before Serving: Allow the wings to rest for a few minutes on a paper towel-lined plate to catch any excess oil before serving.
