A vibrant Fresh Shrimp Chili Dip bursting with flavor from fresh ingredients, perfect for gatherings.

- 100 g medium shrimp, fresh (preferably wild-caught)
- 8 cloves garlic, leave the skin on for roasting
- 2 heads shallots, peeled and quartered
- Red chilies, to taste (fresh or dried)
- 2 Tbsp (30 ml) lime juice (freshly squeezed)
- 1 ½ Tbsp (22 ml) fish sauce
- 1 Tbsp (12 g) palm sugar, finely chopped
- Assorted vegetables for serving (cucumbers, carrots, cabbage, radish, long beans, cauliflower)
- Medium-boiled eggs for serving
- Jasmine rice as the base for serving
Instructions
- Preheat your oven’s broiler on high.
- Sear the shrimp in a hot pan until browned, about 2-3 minutes per side.
- Broil the garlic, shallots, and chilies until charred, about 5-7 minutes.
- Pound the roasted garlic, shallots, and chilies into a creamy texture using a mortar and pestle.
- Add the palm sugar and incorporate it until dissolved.
- Mix in the seared shrimp, reserving one for garnish.
- Stir in the lime juice and fish sauce.
- Taste and adjust seasoning as needed.
- Serve in a bowl with assorted vegetables, medium-boiled eggs, and jasmine rice.
Notes
For added creaminess, mix in some mayonnaise or sour cream.
