- 1 tsp smoked paprika
- 1 tsp chili powder
- 1/2 tsp cumin
- 1/4 tsp cayenne pepper (optional)
- 2 cloves garlic, minced
- 1 tbsp lime juice
- Fresh cilantro, chopped (for garnish)
Instructions
- Heat the vegetable oil in a large skillet over medium heat until it shimmers.
- Add the diced potatoes and cook for 15-20 minutes, stirring occasionally, until golden and crispy.
- In a small bowl, mix together the salt, smoked paprika, chili powder, cumin, and cayenne pepper.
- Sprinkle the spice mix over the golden potatoes and stir to coat evenly.
- Add the minced garlic and cook for 1-2 minutes until fragrant, being careful not to burn the garlic.
- Remove from heat and drizzle lime juice over the potatoes. Garnish with freshly chopped cilantro before serving.
