Ingredients
– 1 1/2 cups All-Purpose Flour
– 1 tablespoon Granulated Sugar
– 1 1/2 teaspoons Baking Powder
– 1 teaspoon Salt
– 1 teaspoon Smoked Paprika
– 1/2 teaspoon Cayenne Pepper
– 2 large Eggs
– 1/2 cup Milk
– 2 cups Corn (fresh, frozen, or canned)
– 1 Jalapeno (finely minced)
– 4 Green Onions (thinly sliced)
– 1/4 cup Fresh Cilantro (chopped)
– Approx. 2-3 cups Vegetable Oil (for frying)
Instructions
- In a large bowl, combine corn, flour, cornmeal, egg, jalapeño, cilantro, green onions, cumin, smoked paprika, salt, and pepper. Mix until well combined. If using, fold in cheese.
- Heat vegetable oil in a large skillet over medium heat.
- Drop tablespoon-sized portions of the batter into the hot oil, flattening slightly with the back of the spoon.
- Fry for 2-3 minutes per side, until golden brown and crispy.
- Remove with a slotted spoon and drain on paper towels.
- Repeat with remaining batter, adding more oil to the skillet as needed.
- Serve warm with a dipping sauce like sour cream, ranch, or avocado crema.
Notes
- For a spicier version, leave the seeds in the jalapeño or add a pinch of cayenne pepper.
- These can also be baked at 400°F (200°C) for 15-20 minutes for a lighter option.
- Make sure the oil is hot before adding the batter to prevent the fritters from becoming greasy.
- These are best served immediately but can be reheated in an oven or air fryer to regain crispiness.
